Brieto M10 Pro Chef/Santoku 160mm/175mm [Made in Japan]We ship this knife from Gifu Tools com in Japan. The Brieto M10 Pro Granton range from Brieto is slightly different to the rest of the knives they have to offer. The Molybdenum Vanadium steel core is blasted with a special heat treatment with water quenching at the temperature of 1050°C. It then undergoes a cooling process which takes the temperature under -73°C to provide rigidity and durability to enhance the sharpness. The indentations made onto this knife reduce the surface area of the blade when it comes into contact with food which allows it to separate with ease.SANTOKU (San – 3 & Toku – benefit): This is the classic Japanese chef’s knife. It is flat from the handle end for about ½ way to the tip and then gently curves to a point. It is ideal for straight vertical chopping, horizontal slicing and roll cutting.
